A weekend in pictures.


For the last 7 or so years I have spent my 4th of July weekend at Camp Lu-Jo , this year I was able to spend the weekend with my dear friend Daleena and her wonderful family. Below are pictures from the 4th of July weekend.

Shrimp Scampi

...or as my sister called it, Shrimp Skanky. Below is my mothers favorite recipe for shrimp scampi. It's a little spicy, but still delicious.  

Ingredients:
1 pound shrimp
4 tablespoons butter
2 garlic cloves
2 tablespoons vegetable oil
2 tablespoons parsley
1 Teaspoon flour
Lemon Juice
Crushed Red Peppers
Linguine Pasta 

Shrimp: Saute garlic and parsley in butter and oil. Add shrimp, cook on med-high. Add crushed peppers. Next, add flour to mixture stirring frequently. During the last minute of cooking add 1 teaspoon of lemon juice.

Pasta: Cook linguine Pasta according to package. Drain and toss with a teaspoon of lemon juice. 

Serve immediately.

Quick Fix Meal #1



On those long busy days like today, cooking dinner is normally not the first thing on my mind when I return home. In fact, the first thing I like to do is lay in my bed with curtains drawn, turn the television on to a funny show, have my small fan blasting on high and enjoy the precious moment.


Today I pulled out one of my favorite quick and easy recipes for dinner: Cheesy chicken, rice, and broccoli casserole.

Below are the ingredients and directions for this tasty dish. Enjoy!




Ingredients:
1 cup of rice-(cooked)
1 cup of boneless skinless chicken (diced and cooked)
1 cup of broccoli (cooked and drained)
1 can of cream of chicken soup
1/2 can of 2% milk
1/2 cup of shredded mozzarella cheese. (or amount desired)


Combine cream of chicken soup and milk in a medium mixing bowl. In a casserole dish combine rice, chicken, and broccoli. Add cream and milk mixture. Combine all and spread throughout dish. Top with desired amount of cheese, and bake on 350 for 20-25 minutes.

Dig in.
